Mango Chicken Salad

This is a really easily prepared and tasty party dish which has been handed friend-to-friend, eventually finding its way here. I think this did originate from Liz and her mum: thank you and I hope I haven't changed it too far from the original version.

Recipe

  • 8 boneless, skinless chicken breast
  • 1 mango, ripe
  • 5 tbs mayonnaise
  • 150 g natural Greek yoghurt
  • 2 tsp curry powder
  • 2 tbs mango chutney
  • salt & black pepper

Mango Chicken Salad Directions

  1. Place the chicken breast in a pan & cover with water. Bring to the boil & simmer for 20 minutes, until cooked. Chill. Peel the mango & cut off the flesh around the stone.
  2. Place the flesh in a liquidiser along with the mayonnaise, yoghurt, curry powder and chutney. blend until smooth. Adjust the seasoning.

  4. The chicken may be left whole or cut into chunks. Combine the chicken with the sauce & chill. Serve surrounded by green salad leaves.
