Oatmeal Cookies

Quite apart from being tasty, oats are full of B vitamins and natural soluble fibre, so a healthy option too. These are quick to make and a great way of increasing oats in our diet.

  • 150 g SR flour
  • 150 g medium oatmeal*
  • 1 tsp ground ginger (optional)
  • 75 g caster sugar
  • 75 g butter or margarine
  • 1 egg, beaten
  • milk to mix
  • brown sugar to sprinkle

Oatmeal Cookies Directions

  1. Preheat the oven to 180 degrees C and line two baking trays with baking parchment.
  2. Mix the dry ingredients together then rub in the butter or margarine. Mix in the egg then add sufficient milk to make a stiff dough. Roll out thinly and cut into 7.5cm rounds.
  3. Place on the baking trays and bake for about 15 minutes until just beginning to turn a light golden brown. Remove from the oven and sprinkle with brown sugar whilst still warm. Transfer to a wire rack to cool..

  5.  * If I only have quick porridge oats in the cupboard I give them a quick blast in the food processor then proceed as with the medium oatmeal.
