Oatmeal & Raisin Cookies

This recipe was give to me some time ago by one of my American friends. It is a soft chewy cookie and though the recipe does make a large quantity, the cookies never seem to last long in our home.

Ingredients

Recipe

  • 200 g raisins - soaked in hot water for a hour.
  • 175 g butter, softened
  • 340 g caster sugar
  • 2 eggs
  • 110 ml water
  • 375 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • pinch ground cloves
  • 400 g rolled oats (quick porridge oats)

Oatmeal & Raisin Cookies Directions

  1. Preheat the oven to 200 degrees C. Line baking trays with parchment
  2. Cream together the butter and sugar. Add the eggs and water. Mix well. Sift together the flour, bicarbonate of soda, baking powder and spices. Fold into the butter mixture. Add the oats and raisins. Mix well.
  3. Drop teaspoonfuls of dough onto the baking sheets, about 3cm apart. bake 8-10 mins until lightly browned.
