Smoked Salmon Quiche

I love the marriage of smoked salmon and dill - it reminds me of our days in Norway.

Ingredients

For 8 people

  • 200 g flour
  • 100 g cold butter
  • 1 egg
  • 1 medium onion, halved and sliced
  • oil
  • chopped dill
  • 200 g smoked salmon
  • 300 ml milk
  • 2 eggs
  • cayenne pepper
  • milled black pepper

Smoked Salmon Quiche Directions

  2. 1. Place the flour and butter in a food processor. Pulse to breadcrumbs. Add the whole egg and pulse to a stiff dough - you may need to add a tbs of cold water. Wrap and chill for 30 minutes.

  4. 2. Meanwhile, {mosgloss=sweat} the sliced onion in olive oil. Cool.

  6. pre-heat the oven to 200 degrees C

  8. 3. Line the quiche dish with the pastry, prick its base and {mosgloss=bake blind} for 10 minutes. Remove the baking beans and paper, bake a further 5 minutes. Remove and turn the oven down to 180 degrees C.

  10. 4. Spread the onion over the pastry base. Sprinkle with the chopped dill. Tear the salmon and scatter over the onion and dill.

  12. 5. Beat the milk with the 2 eggs. Add a pinch of cayenne and black pepper. Pour into the quiche dish. Sprinkle with extra dill and paprika.

  14. 6. Bake for about 40-45 minutes until set.

  16. Serve warm or cold.
