Recipe

  • 225 g shortcrust pastry
  • 300 ml milk
  • 3 eggs 120 g Parsons laverbread 50 g chopped ham
  • 225 g cooked chopped vegetables e.g carrots, leeks, celery, onions
  • 125 g cream cheese
  • pepper
  • 50 g cheddar cheese, grated
  • parsley, chopped

Laverbread Quiche Directions

  1. 1. Line a 12 inch flan case with pastry. Bake blind in the oven for about 10 minutes. remove and cool.
  2. 2. Beat together the eggs and milk.
  3. 3. Add the ham, chopped vegetables, cream cheese in rough teaspoonfuls, and seasoning to the pastry case. Pour over the egg and milk mixture.
  4. 4. Bake for 20 minutes on Gas Mark 4 or equivalent.
  5. 5. Add grated cheddar cheese and sprinkle with the chopped parsley and brown under the grill. Serve hot.
