2bonless, skinless chicken breasts cut into nugget sized pieces
1egg, beaten with 1 tbs water
50g polenta (cornmeal)
1/2 tsp cayenne pepper - or to taste
pinch smoked paprika
freshly milled balck pepper
Piquant Nuggets Directions
In a medium-sized mixing bowl combine the polenta, cumin, cayenne, smoked paprika and pepper. Toss the cubed chicken in the flour. Dip the floured chicken into the beaten egg, making sure it is well coated, then drop into the bowl containing the polenta and spices. Ensure all the nuggets are blanketed in the mix. Either shallow fry in olive oil or use a deep-fat fryer to cook until golden and crunchy.
