Kofta - Style Kebabs

Kofta is a Middle Eastern meatball made from minced lamb. Here I have made a tasty alternative with minced beef using store cupboard ingredients. The mince should not be 15-20% fat, a lean meat will dry too quickly.  Serve with salad and raita for an authentic touch.

Ingredients

  • 250g minced beef (20% fat) or lamb
  • 1/2 onion, roughly chopped
  • 1 clove garlic, crushed
  • handful mushrooms, roughly chopped
  • 1 tsp cumin
  • pinch cinnamon
  • 1 small egg
  • white breadcrumbs from 1 slice bread
  • black pepper
  • salt & black pepper

Kofta - Style Kebabs Directions

  1. Preheat the grill and if you are using wooden skewers you need to soak them in water to prevent burning.
  2. Place all the ingredients into a food processor and whiz until everything is amalgamated.
  3. Tip onto a work surface, divide and roll into 12 balls, slotting them onto skewers.
  4. Place on a baking sheet under the grill for about 15 minutes, turning until evenly cooked.
