Waldorf Quinoa

Ingredients

For 8 people

Recipe

  • 1 cup apple juice
  • 1 cup water
  • 1 cup quinoa, rinsed and drained
  • 2 red apples, diced and tossed in lemon juice
  • 3 stalks celery, thinly sliced
  • seedless grapes, halved
  • 50 g walnuts, toasted and broken
  • 1 pot of natural yoghurt
  • freshly ground black pepper
  • parsley, finely chopped

Waldorf Quinoa Directions

  1. 1. Place the apple juice and water in a saucepan which has a lid. Bring to the boil, add the quinoa and cover. Cook for about 15 minutes until the liquid has evaporated. Cool.
  2. 2. Using a fork, fold in the apple, celery, grapes and walnuts.
  3. 3. Fold in the natural yoghurt, seasoning and chopped parsley.

  5. Serve chilled.
