Coffee Truffle

The classic chocolate truffle is rich in chocolate and butter flavours. This recipe produces a truffle where chocolate and coffee are held together with amaretto almonds, making for an intensely pleasing three-note chord of flavour. Coffeeholics take note.

  • 1 1/2 cups dark chocolate
  • 1/3 cup heavy cream
  • 2 tbs amaretto
  • 1 tbs instant coffee powder
  • 1/3 cup white sugar
  • COATING
  • 1 1/2 cups dark chocolate
  • 1 1/2 cups white chocolate
  • chopped pistachios
  • chopped hazel nuts
  • chopped almonds

Coffee Truffle Directions

  1. To prepare the center: Melt the chocolate in a bowl (do not melt chocolate over direct heat, set the bowl over a pot of simmering water). Stir in the cream, amaretto, coffee and sugar. Chill the mixture in the refrigerator for 4 hours, until firm. Divide this mixture into 24 sections and quickly roll each into a ball. Chill for another hour or overnight. Melt the chocolate for coating in separate bowls. Using two forks, carefully dip the center truffles one at a time into the melted chocolate - either the dark or white chocolate or both. Place the truffles on wax paper to set. You may also roll the centre truffles in chopped pistachios, hazel nuts or almonds.
