Hib! Sorbet

  • 250 ml Hibiscus cordial1 egg white

Hib! Sorbet Directions

  1. 1. In a clean, grease free, bowl whisk the egg white until almost stiff.
  2. 2. {mosgloss=fold} the egg white into the hibiscus cordial.
  3. 3. If using an ice-cream maker, pour the mixture into the bowl whilst the paddle is running. Allow to freeze until the desired consistency is achieved.
  4. 4. If no ice-cream maker is being used, pour the mixture into a suitable container for freezing, cover and place in the freezer.
  5. 5. Freeze for about an hour until the mixture becomes slushy and the edges are solid. Then remove from the freezer and stir well to break up any lumps. Mix the frozen parts into the rest of the mixture.
  6. 6. Return the sorbet to the freezer and freeze again for 2-3 hours or until firm and set, stirring as required.
