Escalpe of Turkey Baked In Citrus Marinade

With quite a citrus kick, these escalopes are moist and tender. Prepare them a few hours before serving, or the evening before, pop into the oven and serve. A powerful marinade but if you do like that strong citrus flavour turn it into a sauce by adding a large knob of butter, re-heat and serve with the turkey.

  • 4 escalpes of turkey
  • 1 lemon, zestand juice
  • 2 tbs raspberry vinegar
  • 1 tsp runny honey
  • 1 tsp dijon mustard
  • 2 tbs olive oil

Escalpe of Turkey Baked In Citrus Marinade Directions

  1. 1. Place the escalopes in a non-metallic oven-proof dish, making sure they are in a single layer.
  2. 2. Shake the remaining ingredients together in a lidded jar and pour over the turkey. Cover and leave in a cool place, turning from time to time.  Bake for about 15 minutes in an oven preheated to 180degrees C, or until the escalopes are fully cooked.
  3. Serve with vegetables and perhaps a buttery baked potato or rice.
