Cut through the crispy yellow crust into succulent pink salmon, the natural oils from the fish oozing into the couscous to produce this wonderful topping.
1. Place the couscous, black pepper, turmeric, and dill into a small bowl. Pour over the boiling water and set aside until all the water has been absorbed.
2. Meanwhile, skin and pin-bone the salmon fillets. Place on a baking sheet.
Preheat the oven to 180 degrees C
3. Fork the couscous to mix and fluff. Spread evenly along the top of each salmon fillet.
Bake in the pr-heated oven for 15-20 minutes until cooked.
