1. Sift together the flours and baking powder. This evenly mixes the ingredients, removes any lumps and adds air and lightness.
2. Using fingertips, rub the butter into the flour until it resembles tiny breadcrumbs. Stir in the sugar and dates, making sure you have broken up any clumps.
3. Mix in the egg and milk mixture to give a stiff paste, knead lightly until smooth and roll to about 1cm thickness. Cut into rounds with a fluted cutter , re-kneading, rolling and cutting until all used.
4. Place on a baking sheet lined with parchment, brush the tops with a little of the egg and milk . Bake for about 12-15 minutes until risen and lightly browned, cool on a wire rack.
