1. Heat the oil in a casserole dish then sauté the onions and garlic until soft but not coloured. Add the chicken breasts and brown.
2. Stir in the rest of the ingredients and bring to a simmer. Place into the preheated oven for about 25 minutes or until the chicken is thoroughly cooked. Check seasoning and serve either hot or cold.
