Recipe

  • 4 tbs home made mayonnaise or a good quality branded version
  • 4 tsp home made basil pesto or a good quality branded version
  • olive oil (optional)
  • a seasonal selection of fruits, vegetables, meat or fish. I used:
  • basil leaves, roughly torn
  • preserved garlic
  • tomatoes, sliced, salted & sprinkled with olive oil
  • olives
  • thinly sliced peach
  • bread sticks
  • ham, torn into slivers

Pesto-Mayonnaise with Antipasto Lillian Directions

  1. Prepare the pesto-mayonnaise. If the pesto is particularly thick, loosen it a little by mixing in a couple of tsp. of olive oil.
  2. Place the mayonnaise into a serving dish then gently 'cut' in the pesto with a swirling pattern, whilst being careful to avoid mixing the two together. Chill. Arrange the antipasto on a servng platter and serve with the chilled pesto-mayonnaise.
