Winter Ham & Lentil Broth

When the day is chilly there can be few dishes more warming than a delicious homemade broth. Serve with rolls or a chunky country bread.

Ingredients

For 4 people

  • 2 tbs olive oil
  • 1 onion, halved, sliced and roughly chopped
  • 2 small carrots, halved and sliced into half-moons
  • 300 g cooked gammon or ham, chunked
  • 200 g lentils
  • 1.5 litres of chicken stock
  • ground black pepper

Winter Ham & Lentil Broth Directions

  2. 1. Using a heavy based saucepan, heat the oil and soften the onion and carrots for about 10 minutes until softened but not coloured.

  4. 2. Add the chunked gammon/ham to the pan followed by the lentils and stock. Bring to a boil, reduce the heat and simmer, uncovered for about 30 minutes until the lentils are tender.

  6. Add a little extra water if the broth appears too thick and serve piping hot.

  13. A fabulous way of using up leftovers from a gammon/ham joint and equally delicious replacing the lentils with split peas but, do check the cooking times on the packet and adjust accordingly.
