Tiramisu

Tiramisu or 'pick me up!' is a traditional Italian dessert. This authentic version was prepared by our friends Monica and Gianluca and omits coffee liquor with an outstanding results; an obviously rich dessert but each mouthful being deliciously feather light.

A small (32 x 22cm) stainless steel roasting pan is ideal for a 2-layer finish.

Ingredients

For 12 people

Recipe

  • 6 eggs, separated
  • 150 g caster sugar
  • 750 g mascarpone
  • 30 savoiardi biscuits
  • 5 mugs of instant coffee (moka/ Nescafé)
  • cocoa powder

Tiramisu Directions

  2. 1. Prepare the coffee and leave to cool.

  4. 2. Cream the egg yolks and sugar together, add the mascarpone and mix well.

  6. 3. Using a clean, grease-free bowl whisk the egg whites to soft peaks (not too stiff) then fold into the mascarpone mixture.

  8. 4. Dip the biscuits into the coffee, making sure they fully absorb the coffee. Arrange half of the soaked biscuits, the first layer, in a serving dish; pour over half of the cream mixture and spread to completely cover. Repeat - arrange the second layer of biscuits and the remainder of the cream.

  10. 5. Using a sieve, sprinkle the cocoa powder over the tiramisu and leave to rest for at least an hour in the fridge - longer is better.
