If you are using wooden skewers, soak them in water for a while beforehand so they don’t scorch.
Mix the olive oil, garlic, chilli, lemon zest and parsley in a large non-metallic bowl. Add the prawns and stir to coat them well, then cover the bowl and refrigerate for 30 minutes. Preheat a chargrill pan or barbecue to a high heat. Thread each prawn onto a skewer and cook for 2 minutes on each side, or until they are lightly charred and just cooked through.
