Ingredients

For 4 people

  • 4 tablespoons olive oil
  • 5 garlic cloves, crushed
  • 2 small red chillies, seeded and finely chopped
  • 2 teaspoons grated lemon zest
  • 2 tablespoons chopped fresh flat-leaf (Italian) parsley
  • 20 large raw prawns (shrimp), peeled and deveined, tails left intact

Hand-Held Prawns Directions

  1. If you are using wooden skewers, soak them in water for a while beforehand so they don’t scorch.
  2. Mix the olive oil, garlic, chilli, lemon zest and parsley in a large non-metallic bowl. Add the prawns and stir to coat them well, then cover the bowl and refrigerate for 30 minutes. Preheat a chargrill pan or barbecue to a high heat. Thread each prawn onto a skewer and cook for 2 minutes on each side, or until they are lightly charred and just cooked through.
