Preheat the oven to 180 degrees C / gas mark 4. Line a baking tray with parchment.
1. Sift the flour and cornflour together.
2. In a mixing bowl, cream the butter. Add the flour, ground almonds and sugar. Work the ingredients together.
3. Turn out onto a lightly floured surface and gently knead to make a smooth paté. Roll & shape into a round, about 1/2 cm thick. Sprinkle the flaked almonds over the shortbread and lightly press onto the surface.
Bake for about 25 minutes, in the pre-heated oven until pale golden. cut into slices while still warm.
Add a sprinkle of brown sugar as the shortbread comes out of the oven - delicious!
