1. Place the chicken between 2 pieces of either cling film or kitchen paper and using a rolling pin, flatten to about 1/2cm - 3/4cm thick. Sprinkle with paprika.
2. Pour about 1tbs oil into a non-stick frying pan and when the oil is hot, sauté the chicken on both sides until golden brown. Remove to a warmed plate.
3. Heat together 1tbs oil and the butter Add the mushrooms and cook until they are beginning to brown. Return the chicken to the pan along with the herbs, lemon zest and juice. Continue to cook for about another 5 minutes or until the chicken is cooked through and hot.
* perhaps mix the paprika with 1tsp smoked paprika to zing up the flavour a little.
