Sweet Potatoes are a carbohydrate food, virtually fat free and a good source of minerals in our diet. Also, I just love the sweet nuttty flavour. For speed I like to bake the potatoes in their jackets, in the microwave.
1. Wash the sweet potatoes, pierce the skins and wrap each sweet potato in kitchen paper. Cook until soft, either in the microwave according to the manufacturers instructions or in a conventional oven at 180 degrees C.
2. When the sweet potatoes are cool enough to handle, ease away the skin. Place the orange flesh in a mixing bowl, add the butter, spices (if using) and seasoning. I would normally just mash with a kitchen fork or otherwise use a potato masher.
3. Either serve immediately or chill and re-heat later.
