Preheat oven to 180 degrees C. Line a baking tray with baking parchment
Remove all visible fat from the chicken breasts. Place between 2 pieces of kitchen parchment and using a rolling pin, bat to flatten. Break the egg into a shallow dish, add a 2tbs water and whisk with a fork. Place the grated parmesan combined with the seasoning in a second shallow dish. Dip the chicken into the egg, making sure it is fully coated, then dip into the parmesan. Depending on the thickness of coating you prefer, you may repeat this entire process.
Place each piece on the baking sheet and bake about 25 minutes until cooked through.
