Chocolate Butter Icing (butter cream)

A rich but simple filling for sponge cakes - double the quantity to include a topping.

Recipe

  • 50 g unsalted butter
  • 100 g sifted icing sugar
  • 1 dessertspoon of milk
  • 1 dessertspoon of cocoa powder (unsweetened)

Chocolate Butter Icing (butter cream) Directions

  1.  Cream the butter until light and airy.  Gradually beat in the icing sugar with a little milk if required and cream together. You will notice the mixture becomming lighter in colour.  Add the cocoa powder and mix well.
