Frozen Slush Margaritas

When citrus fruits are ripe and juicy, prepare a cooling cocktail guaranteed to be a winner with your friends. Choosing either traditional limes or alternatively lemons, prepare an icy slush over which generous slugs of tequila and Cointreau are drizzled. This is best made in the morning of the evening which you intend to serve, otherwise remove from the freezer for about 10 minutes to soften.

  • 250 ml water
  • 100 g sugar
  • 500 ml fresh lime or lemon juice – about 10 juicy fruit
  • 30 ml tequila per serving (2 tbs)
  • 15 ml Cointreau per serving (1 tbs)

Frozen Slush Margaritas Directions

  1. 1. Using a small saucepan, gently heat the water and sugar together, stirring until dissolved. Immediately remove from the heat and cool a little. Add the juice and tip into a large, shallow plastic container.

  4. 2. Once cold, transfer to the freezer for several hours, raking a fork through it from time to time to set to a crystalline slush.

    3. Place a couple of spoonfuls of slush in each glass, drizzling with tequila and Cointreau. Gently swish before serving.
