Florentines

During the 1980's I used to buy the most delightful florentines from Swiss Center in Leicester Square, London and wow! they were good. I hadn't tried them again until a friend passed this wonderfully simple recipe. Delicious with after dinner coffee .... a delicious treat at any time of day!

Ingredients

Recipe

  • 150ml pot creme fraiche
  • 130 g sugar
  • 1 tsp honey
  • 15 g plain flour
  • 150g glace fruit, chopped
  • TO FINISH
  • 100 g sliced almonds
  • 200 g good quality plain chocolate
  • 40 g butter

Florentines Directions

  1.  Preheat the oven to 180 degrees C
  2. You will need a small cup silicon mould *
  3. Place all the ingredients (other than butter and chocolate) into a medium saucepan and mix together, gently, over a low heat. Let the mixture cook for just a couple of minutes until it just begins to caramelise. Place a teaspoon of mixture into the cups or the silicon mold. Bake for about 8 - 10 minutes, until golden, cooling slightly and then gently turn onto a cooling rack.
  4.  Meanwhile, in a bowl over a pan of simmering water, melt the chocolate and butter together. Take care not to overheat or overbeat!. Place a drop of chocolate mixture into each of the cups of your now empty silicon mould, top with a florentine then allow to set in the fridge.
  5. * these florentines are made using a small cup silicon mould, which they literally pop out of.
