Blackened Fish

Cajun seasoning is like a multiple-layered depth charge. Fennel seed, cumin, mustard powder and cayenne are accompanied by sage, oregano, and thyme; garlic and onion are there too. This recipe expands on it by boosting the pungent warmth of cumin, and adds a floral, orange-based sweetness of coriander. The thyme is there to keep things clean at the end of the mouthful. With the coffee this makes for a muscular, yet elegant dish.

  • 360 g grouper
  • FOR THE COFFEE SPICE MIX
  • 2 tsp Cajun spices
  • 2 tsp paprika
  • 2 tsp brown sugar
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp dried thyme
  • 2 tsp black peppercorns
  • 2 tsp roasted ground coffee
  • 1 tbs vegetable oil

Blackened Fish Directions

  1. 1. Mix the coffee spice mixture ingredients together. Season the grouper with salt and rub the spice mixture all over.
  2.  2. In a hot pan, add the vegetable oil and sear the fish on both sides. Finish cooking in the oven for 7 to 10 minutes at 275 degrees Fahrenheit.
