  • COATING SAUCE
  • 25 g margarine
  • 25 g plain flour
  • 500 ml milk
  • salt and pepper to taste
  • POURING SAUCE
  • 50 g margarine
  • 50 g plain flour
  • 500 ml milk
  • salt and pepper to taste

All-In-One White Sauce - with variations Directions

  1. 1. Place the margarine, flour and milk into a small saucepan.
  2. 2. Bring to the boil whisking all the time with a spiral or balloon whisk. Allow to simmer for a minute or two.
  3. 3. Season and use as required.
  4.  Parsley Sauce: Add 1tbs chopped parsley.
  5. Cheese Sauce: Add 50g grated cheese and a pinch of mustard, cayenne pepper or smoked paprika.
  6. Anchovy Sauce: Add 2tbs anchovy essence.
  7. Shrimp Sauce: Add 50g chopped cooked shrimps.
