Apricot Stuffing

Apricot has a wonderful affinity to lamb and  would be equally well partnered with poultry.

  • 1 onion, chopped
  • oil
  • 50 g rice, cooked
  • 50 g dried apricots, diced
  • 2 tsp lemon juice and zest of the lemon

Apricot Stuffing Directions

  1. Sauté the onion in olive oil, until soft but not coloured then add the rest of the ingredients to the pan and mix well; this is now ready to use as either a stuffing or as an accompaniment.
