Garlic Stuffed Mushrooms

I love garlic mushrooms and this recipe came about when I wanted something slightly more substantial which I could serve at a supper party, in fact depending on the size and quantity of the mushrooms this recipe can be used as a starter or as a light supper dish, accompanied by a mixed salad. For this reason I have not given quantities although I would think up to 4 each would be quite sufficient.

  • (large, flat for supper; smaller for a starter)
  • softened
  • cream cheese
  • crushed}
  • walnuts
  • sun dried tomatoes
  • of fresh coriander, chopped
  • ground black pepper
  • parmesan cheese

Garlic Stuffed Mushrooms Directions

  1. 1. Wash and dry the mushrooms. Remove the stalk, trim the ends and finely chop.
  2. 2. Place the mushrooms in an oven proof dish (I like to use individual dishes here).
  3. 3. In a medium sized mixing bowl, mix together the butter, mushroom stalks, cream cheese, garlic, walnuts, tomatoes, coriander and black pepper. Mix well.
  4. 4. Tightly pack the filling into the mushroom cavities. Sprinkle with parmesan and paprika.

  6. bake at 180 degrees C for about 15 - 20 minutes. Serve with crusty bread to mop up any juices.

  7. I use about 50% butter and cream cheese, though this can vary to taste and what you have in the fridge!
