Colliery Mince Pies

A variation of the mince pie theme where nothing looks more festive than a plate of assorted mince pies; some topped with thick blobs of snowy glace icing and others with tiny pastry lids.  Prepare a batch to freeze and simply pop them in the oven to bake on demand. Use with the cheats mincemeat recipe which can be found in the baking section.

  • 225 g Rough Puff or Shortcrust Pastry
  • sweet mincemeat
  • icing sugar

Colliery Mince Pies Directions

  1. Preheat the oven to 180 degrees C
  2. 1. Roll out the pastry thinly and cut out 15 rounds to fit your patty tin. Place a spoonful of mincemeat inside each pastry case.
  3. Bake for about 20 minutes then cool on a wire rack.
  4. 3. In a small bowl mix the icing sugar with water to form a stiff glacé icing and spread liberally on top of the cold pies.
