Roast Sweet Potato, Potato & Pear Mash

This is probably more of a {mosgloss=puree} than a mash and makes a really light contrast to a rich winter casserole. The quantities are quite loose though you would need to use about equal quantities of sweet potato to potato. I 'baked' all of this in the microwave as I find it gives a smoother mash which you only need to work with a fork - It would work equally well as oven baked if you happen to be using the oven at the same time.

  • 650 g sweet potato
  • 650 g potato
  • 1 hard pear, peeled and cored
  • of salted butter
  • 2 tbs cremé fraiche
  • ginger
  • freshly ground black pepper

Roast Sweet Potato, Potato & Pear Mash Directions

  1. 1. In either the microwave or oven bake the sweet potato and potatoes until soft. Cool a little until you can handle them, peel and put the flesh into a mixing bowl.
  2. 2. Meanwhile cook the pear in the microwave then add the cooked fruit to the vegetables - use a slotted spoon to transfer the pear, leaving behind the juices.
  3. 3. Add the butter and cremé fraiche and mash using a fork - you should not need to use a potato masher, but this is preference.
  4. 4. When you have the mash add a pinch of ginger and seasoning to taste - you should not be able to identify the ginger as an ingredient, it is just there to give a 'lift' to the flavour'.
