Chickpea Dip

This is similar to Hummus and is beautifully flecked with green coriander.

  • 400 g can chickpeas
  • oil - a good fruity one
  • 1 fat clove garlic, crushed
  • 1 tbs tahini paste
  • handful chopped coriander
  • 1 heaped tbs Greek yoghurt
  • 1/2 lemon

Chickpea Dip Directions

  1. 1. Tip the chickpeas into the goblet of a liquidiser and with the motor running, pour in a steady stream of oil which will blend to make a rough paste - it is entirely up to you how smooth or rough you want the finished dip.
  2. 2. Scrape the chickpea paste into a mixing bowl and mix in the rest of the ingredients.
  3. 3. Place into a small serving bowl and drizzle with oilve oil and garnish with a slice of black olive. Cover and chill.
