Soufflé Mash

Mashed potato with a twist. The beaten egg white makes this mash beautifully light and fluffy.

For 4 people


  • 500 g potatoes, peeledand cut into small evenly sized pieces
  • 25 g buter
  • 4 tbs milk
  • 50 g hard cheese, grated - such as cheddar
  • 1 egg
  • 1 tbs parsley, chopped

Soufflé Mash Directions

  1. 1. Place the potatoes into a medium sized bowl with 4tbs water. Cover and microwave on High for 7-10 minutes until soft. Drain.
  2. 2. Mash the potatoes with the milk and butter.
  3. 3. Separate the egg. Beat the yolk and cheese into the potato then stir in the chopped parsley.
  4. 4. In a clean, grease free bowl, whisk the egg white until it stands in soft peaks. Fold into the mashed potato.
  5. 5. Spoon into a microwave safe serving dish and microwave on High for 3-4 minutes until the potato is fluffy.
  7. If you would like to, extra cheese could be sprinkled over the top and browned under a pre-heated grill.
