Microwave Meatballs in Mushroom & Tomato Sauce

Cooked tomatoes have been proven to be more beneficial to us than raw. Here is an easy way to include a portion into our diet. Serve with rice or buttered noodles and a side salad.

  • 500 g lean minced beef
  • 25 g breadcrumbs
  • 1 onion, finely chopped
  • 1 tbs tomato pureé
  • 1 tsp oregano
  • freshly ground black pepper
  • 1 egg, beaten
  • 25 g butter
  • 400 g can tomatoes
  • 100 g mushrooms, chopped
  • 1 tbs tomato pureé
  • 25 g flour
  • 300 ml hot beef stock
  • freshly ground black pepper

Microwave Meatballs in Mushroom & Tomato Sauce Directions

  1. 1. mix the mince, breadcrumbs, onion, pureé, oregano and seasoning together. Add the egg and mix well. Form into 16 balls.
  2. 2. Place the meatballs around the edge of a large microwave plate and cook on Roast (70%) for 3 minutes. Turn the meatballs over and Roast (70%) for a further 4 minutes. Remove and reserve.
  3. Sauce
  4. 1. Place the butter, tomatoes, mushrooms and tomato pureé into a microwave bowl, cover and cook on High for 5 minutes.
  5. 2. Stir in the flour then gradually add the hot beef stock, continually stirring. Microwave on High for 2 minutes.
  6. 3. Pour the sauce into a liquidiser and blend to smooth. Season to taste.
  7.  Place the meatballs into a microwave casserole dish, pour over the sauce and microwave on High for 5 minutes.
