Mini Mont Blanc

What could be prettier than these wintery sweet canapés to round off a party? They are quick to make: either the tiny canapé version or just as easily produced as a dessert using regular sized meringue nests.

  • quantity of sweetened chestnut pureé and double cream
  • meringues
  • cream to decorate
  • quantity is entirely up to you. I find that about 200 ml of both chestnut pureé and cream, top 200 g of mini meringues)

Mini Mont Blanc Directions

  1. Whip the chestnut pureé and double cream together until it is stiff enough to pipe.  In a separate bowl whip cream to decorate.  Using either a piping bag or syringe, pipe a swirl of chestnut mixture on top of each meringue. Pipe a swirl of whipped cream on top of the chestnut. Chill and serve.
