Spiced Carrots

I am always looking out for inventive ways of serving vegetables. Here is a tasy idea to accompany a speedy midweek meal.

For 4 people


  • 1 tbs soft brown sugar
  • 50 g butter
  • 0.5 tsp ground coriander
  • ground cumin
  • 0.5 tsp caraway seeds
  • 1 clove {mosgloss=garlic, crushed}
  • 500 g carrots, peeled and cut into diagonal slices
  • 150 ml hot chicken stock
  • chopped herbs to garnish - corianderand parsley are good

Spiced Carrots Directions

  1. 1. Place all ingredients except for the carrots and stock into a microwave casserole dish.
  2. 2. Cover and microwave on High for 4 minutes, stirring twice during this time.
  3. 3. Add the stock and carrots to the spice mixture. Stir. Cook on High for a further 4 minutes. Drain off any excess liquid and sprinkle with fresh chopped herbs to garnish.
