Toffee Apple Pudding

A comfort pudding. Handle the pastry lightly and the results will be amazing. Serve with custard or a drizzle of cream.

For 4 people


  • 15 g butter
  • 25 g demerara sugar
  • 200 g S.R. flour
  • 100 g vegetable suet
  • 500 g cooking apples
  • 100 g demerara sugar

Toffee Apple Pudding Directions

  1. 1. Grease one litre microwave pudding basin with 15g  of butter, then press 25g demerara sugar firmly around the sides.
  2. 2. in another basin mix the flour and suet to a firm dough with water. Roll out and line the pudding basin, reserving enough to make the lid.
  3. 3. Peel and thinly slice the apples and layer in the basin with the demerara sugar (reserve about 1 tablespoon of sugar to sprinkle on the top of the pastry). Cover with a pastry lid.
  4. 4. Cover with pierced microwave cling film.
  5. 5. Cook on 70% for 8 1/2 minutes. Stand for 5 minutes before serving.
  6. 4. Moisten the top with a little water and sprinkle with sugar
