Southern Fried Chicken

This recipe certainly would not win a health food award, but served with 'real' chips, salad and blue cheese dip then this dish really hits the spot!

For 4 people


  • 6 chicken breasts, boneless and skinless
  • 750 ml cold water
  • 3 tbs salt
  • 1 egg, beaten
  • 250 ml milk
  • 300 g plain flour
  • 1 tbs salt
  • 1 tsp sweet paprika
  • black pepper
  • oil for frying

Southern Fried Chicken Directions

  1.  Remove all visible fat and sinew from the chicken. Cut each breast into 3 pieces and place in a mixing bowl. Dissolve 3tbs salt in the cold water, pour over the chicken and leave to marinade for about 30 minutes.
  2. Meanwhile, beat together the egg and milk in a mixing bowl then in another bowl mix together the flour, 1tbs salt, paprika and black pepper.  Drain the chicken and pat dry with paper towels. Dip each chicken piece into the egg mixture, flour, egg mixture then flour again. Make sure the chicken is totally covered at each step.
  3. Easy tip: line a tray with baking parchment before placing the floured chicken on the tray ready for frying.
  4. Deep fry in the hot oil - It takes about 20 minutes until the chicken is golden and the batter crispy. If you are shallow frying, do remember to turn the chicken mid way through cooking. Drain on absorbent paper and keep warm in a low oven, until ready to serve.
  5. Either use a deep fat fryer or a frying pan filled with oil. The chicken should sizzle as you add it to the hot oil.
