Micro Ratatouille

Ratatouille is a perfect accompaniment to any grilled meat or fish, adding both colour and flavour to the plate. Sprinkle with a handful of chopped parsley or basil just before serving.

  • 1 medium aubergine, sliced
  • 1 medium courgette, sliced
  • 0.5 green pepper, sliced
  • 0.5 red pepper, sliced
  • 1 medium onion, finely sliced
  • 4 tomatoes, peeled and chopped
  • 1 clove garlic, crushed
  • 50 g butter
  • salt and freshly ground black pepper

Micro Ratatouille Directions

  1. 1. Place the sliced aubergine in a colander and sprinkle with salt. Leave to drain for 15 minutes then rinse thoroughly.
  2. 2. Arrange all the vegetables in layers in a microwave casserole dish and dot with butter.
  3. 3. Cover and microwave on high for 5 minutes. Stir. Microwave for a further 5 minutes on high. Stir. Microwave for a further 3 - 5 minutes until the vegetables are soft. Season to taste.
