Laver Cakes

Delightful patties to accompany crispy bacon for a superb brunch.

  • 4 slices streaky bacon120 g Parsons tinned laverbread30 g medium or fine oatmeal

Laver Cakes Directions

  1. 1. Mix the laverbread and oatmeal together and shape into little flat cakes about 2 inches across and 3/4 inch thick.
  2. 2. Fry the bacon until crisp in a non-stick frying pan. Remove and keep warm in a low oven.
  3. 3. After removing the bacon from the pan place the laver cakes into the hot bacon fat and fry for 2-3 minutes on each side maintaining the shape with a pallet knife as they fry. (add extra oil if necessary)
  4. 4. Lift out carefully and serve with the bacon.
