Spiced laver Cake

The French love to serve a savoury cake as an accompaniment - here is an original Anglo-Saxon alternative!

  • 225 g Parsons laverbread 50 g melted butter 225 g broad beans (Cooked) 1 cup breadcrumbs 1 tbs tomato puree 6 eggs 1 tbs Vindaloo paste salt to taste 1 tbsp vinegar

Spiced laver Cake Directions

  1. 1. Mix first seven ingredients and then stir in the eggs, well beaten, into a bowl with the salt.
  2. 2.  Pour into a greased mould and cook in the oven for 1 hour at Gas Mark 4 or equivalent.
