Stuffed Peppers With Laver

A healthy midweek meal bursting with flavour. Serve with salad or even freshly cooked chips if you feel really naughty!

  • 225 g Parsons laverbread 4 red peppers (cut in half and de-seeded) 1 inch ginger root, grated2 tbs lime juice 1 medium onion, finely chopped2 tbs soya sauce 2 cloves garlic., chopped2 tbs breadcrumbs Slices of Lime to Garnish

Stuffed Peppers With Laver Directions

  1. 1. Stir fry the ginger, onion and garlic in olive oil. When soft, add laver and cook through.
  2. 2. Add lime juice and soya sauce then breadcrumbs. Mix all ingredients together.
  3. 3. Fill peppers and cook in the oven for 40 minutes at Gas Mark 4 or equivalent. Garnish with lime slices.
