Bean And Laver Salad

A 3-step summer salad which is just as easily made, out of season, using pre-shelled frozen broad beans.

  • 225g broad beans, shelled
  • 3 tbsp. unsalted vegetable stock
  • 120g Parsons laverbread
  • garlic croutons

Bean And Laver Salad Directions

  1. Cook broad beans in stock and add laverbread. Continue cooking until the stock is absorbed. Cool. Add croutons just before serving so that they remain crisp.
