Smokey Roast Chicken

I have included this in Midweek Express, as it only takes about five minutes to prepare, then pop it into the oven until golden and succulent. Serve with salad or seasonal vegetables of your own choice. I like to roast red peppers filled with tomatoes as they can all cook in the oven at the same time.

  • 1 oven ready chicken
  • 1 lemon, halved
  • 1 tsp mild paprika
  • 0.5 tsp smoked paprika
  • 2 tsp dried mixed herbs
  • oil

Smokey Roast Chicken Directions

  1. Pre-heat the oven to 180 degrees C.
  3. 1. Place the halved lemon inside the cavity of the chicken.
  4. 2. In a small bowl mix together the paprika, smoked paprika and mixed herbs.
  5. 3. Drizzle olive oil over the chicken then sprinkle over the herb mix.
  6. Cook in the pre-heated oven for about an hour, depending on the size of chicken, or until the juices run clear.
  7. Remove from the oven, cover with foil and a clean tea towel and rest the chicken for about 15 minutes before serving. This is important as it allows all the juices to seep back into the meat.
