Walnut Crunchies

Quick to make cookies which the dough can be made in advance, stored in the fridge and cooked as desired. These tasty treats are great with ice cream or just that afternoon cuppa.

  • 200 g hard (block) margarine or butter
  • 275 g plain flour
  • 100 g icing sugar
  • 100 g walnuts, finely chopped
  • 50 g brown sugar

Walnut Crunchies Directions

  1. 1. Rub the margarine or butter into the flour, then add the icing sugar and walnuts. Press the mixture together to form a stiff dough.
  2. 2. Roll into a sausage shape about 4cm in diameter. Roll up into greaseproof paper and chill in the fridge until firm.
  3. 3. Cut into 1.5cm thick slices, flatten slightly and roll in brown sugar.
  4. 4. Cook 4 slices at a time on a sheet of baking parchment for 2 minutes. Cool on a wire rack.

  5. based on a 600W oven. Using butter will give a richer flavour.
