Tuna & Courgette Quiche

As well as being a healthy option the wholemeal flour adds colour to the pastry.

For 20 people


  • case:
  • 100 g plain flour
  • 50 g wholemeal flour
  • salt
  • 75 g hard (block) margarine or butter
  • to mix
  • 1 medium courgette, sliced
  • 350 g can tuna
  • 2 eggs
  • 2 tbs milk
  • black pepper

Tuna & Courgette Quiche Directions

  1. Grease a 20cm quiche dish (non metal)
  3. 1. Sift the flour and salt, rub in the margarine or butter and mix with cold water to form a stiff dough. Roll out and line the quiche dish.
  4. 2. Damp the edges of the pastry, cover with a piece of kitchen roll and place a small plate in the centre (make sure the plate has not any metallic decoration). Stand the quiche dish on a small cup and microwave on high for 3 minutes.
  5. 3. Remove the plate and paper. Microwave for a further 1 minute. Remove from the oven.
  6. 4. Place the sliced courgette in a small dish and microwave with one tablespoon of water for 1 minute.
  7. 5. Drain the can of tuna, flake the fish and place in the pastry case. Arrange the courgette around the edge.
  8. 6. Beat the eggs with the milk, salt and pepper. Pour over the quiche filling and microwave on High for 7-8 minutes until the eggs are set. Stand for 10 minutes.
  10. Serve hot or cold.
