Micro Chilli Con Carni

Chilli is always my standby Monday evening supper and this is a really speedy version!

For 4 people


  • 1 tbs olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 25 g plain flour (about 1 rounded tbs)
  • 400 g can chopped tomatoes
  • 1 tsp chilli powder (to taste)
  • 500 g minced beef
  • 400 g can kidney beans, rinsed and drained

Micro Chilli Con Carni Directions

  1. 1.Place the oil in a microwave proof casserole dish, along with the chopped onion and crushed garlic. Cover and cook on 100% for 2 minutes.
  2. 2. Stir in the flour then add the chopped tomatoes, chilli powder and minced beef. Stir well breaking up the mince with a fork. Microwave (100%) for 12 minutes, stirring 3-4 times.
  3. 3. Add the kidney beans and cook a further 2 minutes.
  5. Serve with rice and salad.
