Apricot-Glazed Pork Chops

These pork chops are great - and easy! They go well with honey-mustard carrots and some rice.

  • 4 boneless center-cut pork loin chops (about 1/2" thick)
  • black pepper
  • 1/4 cup apricot preserves
  • 2 tsp minced peeled fresh ginger

Apricot-Glazed Pork Chops Directions

  1. 1. Heat a large non-stick skillet coated with cooking spray over a medium heat until hot.
  2. 2. Season chops with salt and freshly ground black pepper before adding to preheated skillet. Cook for 4 minutes per side, or until barely pink in the center.
  3. 3. Combine preserves and ginger and add to skillet with chops and cook until bubbly and hot, turning chops once to coat with glaze.
