Kedgeree in a Jiffy

  • 150 g long grain rice
  • 425 ml boiling water
  • 300 g fresh smoked haddock
  • 25 g butter
  • 100 g peeled prawns
  • 2 pre-cooked hard boiled eggs, roughly chopped
  • chopped parsley

Kedgeree in a Jiffy Directions

  1. 1. Place the rice in a large microwave proof bowl with the boiling water. Cover with microwave film, pierce, and cook on high for 6-7 minutes, stirring twice.
  2. 2. Place the fish in a single layer in a microwavable dish, dot with butter, cover with microwave film (pierced). Cook on high for 3-4 minutes. Skin and flake the fish.
  3. 3. Fluff up the rice. Place the rice, fish and prawns in a microwave proof serving dish. Cook for 2 minutes on high. Add the chopped eggs, microwave on high for 30 seconds.
  5. Garnish with chopped parsley and serve.
