Lemon & Bay Roast Chicken

Really easy to prepare - serve alongside baked potatoes (cooked in the oven at the same time) and veggies of your own choice. If you do not have fresh bay leaves use rosemary instead, though the bay does add a wonderfully aromatic flavour.

For 3 people


  • 1 x 2 kg chicken
  • 1 lemon, halved
  • 2 fresh bay leaves
  • 1/2 onion, peeled

Lemon & Bay Roast Chicken Directions

  1. Preheat the oven to 160 degrees C
  3. Place the chicken in a roasting tin and put a piece of lemon into the cavity followed by a bay leaf and the onion then the remaining piece of lemon and bay leaf. Place in the preheated oven and roast 1 1/2 - 2hrs until cooked. Remove from the oven, cover with foil and rest for about 15 minutes (enough time to cook the vegetables). Carve and serve.
